Rising food inflation and operational costs in the food and beverage sector are pushing businesses to seek new solutions. Industry representatives point out that, alongside food waste, the time lost to manual operations has also become a significant financial burden for businesses.

Turkey's food service sector is going through a difficult period due to rising costs and labor expenses. According to data from Turkey's Waste Prevention Foundation's 2025 Waste Report, approximately 23 million tonnes of food are wasted annually in Turkey, with a significant portion of this loss occurring in out-of-home consumption channels. However, analyses conducted in the sector reveal that the main financial loss businesses face stems not only from food waste, but also from time loss resulting from inefficient operational processes.

According to assessments by the Istanbul Chamber of Commerce Restaurant Committee, while labor costs represent an average of 25 percent of total turnover globally, in Turkish restaurant operations this ratio can reach 45–50 percent. Meanwhile, according to the Labor Input Indices report published by Turkey's Statistics Institute, hourly labor costs showed an annual increase of 34.2 percent. This situation means that operational inefficiencies translate directly into costs for businesses.

"The Greatest Waste Lies in Time Theft"
Evaluating productivity problems in the sector, İlyas Akça points out that businesses need to review not only waste in the kitchen, but also operational time management.

NarPOS Co-founder and CEO Akça made the following assessment on the matter:
"Many business owners turn to restrictions that negatively affect employee motivation to control costs, or remain dependent on manual processes for inventory control. Yet this approach leads to uncontrolled waste of management time and team energy—the business's most valuable resources."

According to Akça, waste in the food service sector is not limited to food alone. Manager and staff time loss caused by operational inefficiency can also produce serious financial consequences for businesses. Particularly in high-cost economic conditions, technology is becoming an important productivity tool for businesses.

Digitalization Increases Efficiency
