Domestic Enzyme Developed by Turkish Scientists
Tekirdağ Namık Kemal Üniversitesi and Trakya Üniversitesi researchers develop domestic enzyme for confectionery, chocolate, beverage and beekeeping sectors.
Scientists from the two universities recently launched a project on domestic enzyme production in laboratory conditions with TÜBİTAK grant support of TRY 200,000. Preliminary trials of the enzyme produced using domestic sources concluded successfully.
Assoc. Prof. Hasan Murat Velioğlu, Faculty Member at NKÜ Faculty of Agriculture, Agricultural Biotechnology Department, noted that enzyme is a biological substance produced by living organisms or microorganisms that accelerates biochemical reactions.
Velioğlu, explaining that they used domestic sources to produce enzyme within the project scope, stated: "The invertase enzyme in our project converts sucrose, known as table sugar, into a sweeter sugar syrup mixture known as fructose and glucose."

Enzyme Prevents Crystallization of Sugar Fillings
Velioğlu emphasized that the domestic enzyme can be used in many sectors and continued as follows: "The domestic enzyme prevents crystallization of sugar fillings used in chocolate production. Aqueous sugar solutions prepared from table sugar are given to bees to help them survive winter. However, bees find it somewhat difficult to use the sugar provided here. They cannot fully benefit from it. This is because table sugar is a fairly large molecule. With this enzyme we will use, we are converting the sugar into a form that bees can better utilize and more easily convert to energy. This makes it easier for bees to survive winter."Enzyme Could End Import Dependency
Pointing out that the low-cost domestic enzyme can be used in the confectionery, chocolate, beverage and beekeeping sectors, Velioğlu explained that they developed the project with the aim of freeing Turkey from import dependency in enzyme production. Velioğlu stated: "When the domestic enzyme reaches the market stage, we will conduct presentations by organizing meetings with representatives of different sectors, such as beekeepers, confectioners and chocolate manufacturers. Turkey's budget for enzyme imports is at the level of USD 150 million. The global enzyme market stands at USD 8 billion. There is enzyme use in different sectors in our country but no production. We import everything from abroad."Advertisement
